Spinach Artichoke Dip
Ingredients
For Onions
- 1 each yellow onion diced
- butter
- salt
- black pepper
For Dip
- 14oz can artichokes drained and chopped
- 10oz pack frozen spinach thawed
- sauteed onions cooled
- 8 oz cream cheese
- 1 cup ricotta
- 1/2 cup sour cream
- 8 oz mozzarella cheese shredded
- 4 oz parmesan cheese shredded
- 1 Tbsp garlic powder
- 1/2 Tbsp onion powder
- 2 tsp cumin
- 2 tsp paprika
- 2 tsp black pepper
- 1 tsp cayenne pepper
- salt to taste
Instructions
For Onions
- Sautee onions in a pan with butter, salt, and pepper over medium heat until translucent. Cool and set aside.
For Dip
- Preheat oven to 350 degrees.
- Set cream cheese out and let soften until room temperature.
- In a bowl mix together all ingredients except for half the mozzarella (4oz) and half the parmesan (2oz)
- Pour into a lightly oiled baking dish and add remaining cheese to the top of the mix.
- Bake for 20-30 minutes, until the top cheese layer begins to slightly brown.
- Serve hot with tortilla chips, pita chips, or crudités.
